Gajar halwa is one of the most popular dessert of India, known to have originated in Punjab, it is a delight in winter months.  Gajar Halwa is a combination of nuts, milk, khoya,sugar and ghee with grated carrots and served hot during the winter.It is a popular dessert all over India and often served at most festivals. Gajar Halwa is a light nutritious dessert. It makes its presence in most special occasions like festival , celebrations and parties. It is one of the classic Indian desserts that would not fail to impress anyone. Sikhs from Punjab introduced it first to the house of Mughals . The Mughals enjoyed its vibrant colour, the aroma and the texture and thus Gajar Halwa gained popularity far and wide. The word Halwa finds its roots in the Arabic language. The Province of Punjab took an instant liking to it and started developing new and innovative recipes. It was the vegetable that peaked as a winter harvest and its abundance in winters pushed the cooks to develop a hot delicious desserts best served anytime of the day, before or after meals.

Ingredients:

1kg Carrots
1 1/2 Litre Whole Milk
6 green Cardamoms
5-7 Tbsp Ghee
2 Tbsp- Raisins
1 Tbsp Shredded Almonds
1 Tbsp Pistachios
1/2 Cup Khoya (optional)

Preparation:

  1. Dry roast nuts on low heat until crunchy and set them aside to cool and chop them.
  2. In a pan bring milk to boil. Add grated carrots and begin to stir.Cook until the milk has completely evaporated.
  3. Add sugar as required and stir. Sugar would release lot of moisture . Cook until half the moisture evaporates. Now add ghee and stir well. Continue to cook until the halwa thickens.If you want you can add grated Khoya stir and cook for 2 – 3 mins.
  4. Garnish with nuts and serve hot.
